I was working with a Pit Barrel Smoker
Today it was fired with some Hard Wood Lump Charcoal from local big box store.
You can add some oak or Hickory or whatever your favorite wood is on top of the hard wood lump.
The recipe I use is Kent Rollins. Just look up Kent Rollins Brisket on Youtube. I follow his directions exactly and it turned out great. Not much left for tomorrow at all.
I prep the brisket the day before with lime juice and Kent Rollins Dry Rub. and put in fridge. I started about 6 hours before dinner time today. With a cook time right at 5.5 hours. Takes about 1/2 hour to get the smoker fired and running well. | |
